Chewy Pumpkin Cinnamon Oatmeal Breakfast Squares

Ingredients
  

BASE LAYER

  • 1/4 cup Coconut Oil
  • 2 Tbsp Pure Maple Syrup
  • 1/3 cup Pumpkin Puree
  • 1 cup Oat Flour (or blend outs in a food processor or blender to make your own)
  • 1 scoop Uplift
  • 1 tsp Cinnamon
  • 1/2 tsp Salt

TOP LAYER

    Wet

    • 1/4 cup Almond Milk
    • 1 Banana Mashed
    • 1/4 cup Pumpkin Puree
    • 2 Tbsp Coconut Oil
    • 1 tsp Pure Vanilla Extract

    Dry

    • 1/4 cup Oat Flour
    • 3/4 cup Oats
    • 1/3 cup Pecans chopped (plus 2 Tbsp for topping)
    • 2 Tbsp Hemp Seeds
    • 1 Tbsp Flax Meal (ground flax seeds)
    • 1 tsp Cinnamon
    • 1/2 tsp Ginger
    • 1/2 tsp Baking Powder
    • 1/4 tsp Nutmeg
    • 1/4 tsp Cloves
    • 1/4 tsp Salt

    Icing

    • 1/4 cup Nutiva Coconut Manna melted

    Instructions
     

    • Turn oven on to 350.
    • Line a 8x8 glass baking dish with parchment paper.

    Base Layer

    • Add all ingredients to a food processor or high speed blender and combine until it forms a dough like texture - it should ball up on it's own in the process.
    • Add base mixture to the glass pan and use your hands to flatten it out until it fills the entire baking dish in an even layer.

    Top Layer

    • Add wet ingredients and mix until well combined. If you're having troble combining the ingredients because of the almond butter or cocnut oil heat at 30 second intervals if necessary.
    • Add dry ingredients to wet and mix until well combined.
    • Add mixture to the baking dish on top of the base layer and spread out until even.
    • Add 2 Tbsp of choppe pecans to the top layer if desired.

    Bake: 30 minutes

      Ice: with melted coconut manna

        Notes

        Tip for icing: place jar (with lid off) in a bowl of hot water until it begins to melt and mix to encourage the manna to melt completely.
