Warm Autumn Salad with Delicata Squash

If you’re not a salad person try warm salads! They are such a game changer and perfect for this cooler season. You can serve this dish as a main or as a side. It’s easy and the delicata squash is SO dreamy. Lucky for you I’m sharing my favourite way to cook Delicata Squash in this recipe! If you haven’t tried delicata squash before you are in for a TREAT! Seriously, they taste like candy and I never get over how delicious they are. If you’re anything like me, you’ll be making this dish more than once this week!

Creamy Cauliflower Mashed

This is great to serve as a side or to add as a main part of a meal. Some of my favourite ways to eat it are paired with lentil “meatloaf” or “meatballs”, with portobello mushroom caps. I love this “lightened up” veggie packed version of this “mash” so much. This recipe is just as versatile as mashed potatoes and could probably fool someone if you served it in place of potatoes and didn’t tell them! My picky (and plain) younger brother even enjoys this recipe so that’s how I know it’s a winner.

Simple Creamy Tomato Soup

What’s better than a comforting bowl of tomato soup? This simple creamy tomato soup with hidden veggies of course! I actually threw this together on a whim and wrote down the recipe just incase it turned out – thankfully it did because now I get to share with you! This is a thicker/creamier version of tomato soup. My husband isn’t a big fan of thin/runny soups and likes a bit more texture, so this one was a bit of a compromise. I thickened it up with the cauliflower and coconut milk and added a nice crunch with the chickpeas!

Tips for Preventing + Combating the Winter Blues & Seasonal Affective Disorder (SAD).

As the days get darker it can be harder to keep that pep in our step. The cooler weather & shorter days are definitely here to stay. I don’t know about you, but I’m a summer girl through and through! Winter can be hard for the best of us – it’s cold, it’s dark and it’s just straight up harder to find motivation.

With that said, I find it way easier to prevent a funk then to dig myself out of one, so I wanted to share a few basic tips that help me prevent the sluggish feeling that can come along with the change of seasons and colder, darker weather. *These tips can also be used to pull yourself out of a slump.
